Almonds are grown in abundance in Portugal so it is little wonder there is a dessert containing the nut. The sweet is usually served in small portions, in individual ramekins. High in sugar the sweet can become sickly if you over indulge.

 

Dôce Amêndoa - The Recipe

Ingredients:

 

2.5 dl Water

500 grams Sugar

1 Tea Cup of Almonds (ground)

4 Egg Yolks

Cinnamon (to taste)

Preparation

Put the sugar and the water into a pan, until the mixture becomes glossy. Take it off the heat and blend in the ground almonds and beaten egg yolks.

 

Return the pan to the heat, stirring constantly until the mixture thickens, then transfer the mixture into small bowls. Leave to cool and sprinkle with cinnamon.
